Peanut Butter Cookies!

I must be lacking in protein or something this week--I have been craving peanut butter cookies like crazy. I honestly don't even really like peanut butter, but I couldn't get these cookies out of my mind. So, I set out to find a good recipe. Thanks to Peter Marie, I'm now a regular purchaser of butter flavor Crisco! Sounds healthy, doesn't it!?! On the back of the can, they had a recipe for Peanut Butter Cookies. I made a few adjustments in an attempt to make them a little more "healthy", and they turned out super yummy! Try them sometime!

Irresistible Peanut Butter Cookies
3/4 c. creamy peanut butter (I used all-natural, organic)
1/2 c. Crisco butter flavor shortening
1 1/4 c. firmly packed brown sugar
3 T. milk
1 T. vanilla
1 large egg
1 3/4 c. flour (I used 1 c. flour and 3/4 c. whole wheat flour)
3/4 tsp. baking soda
3/4 tsp. salt

Heat oven to 375 degrees. Combine peanut butter, shortening, brown sugar, milk and vanilla in large bowl. Beat at medium speed until well blended. Add egg. Beat just until blended. Combine flour, baking soda and salt. Add to creamed mixture at low speed. Mix just until blended. Drop by rounded tablespoonfuls of dough on greased cookie sheet. Flatten slightly in a crisscross pattern with tines of fork dipped in sugar. Bake for 7-8 minutes or until set and just beginning to brown. Cool 2 minutes on baking sheet. Remove and cool completely.

Those do sound delicious! Maybe I'll make them and dip them in chocolate......:)
