Onda-lay, Onda-lay, Arriba!!!

Tonight's dinner smelled soooo good, it just could not cook fast enough! Literally, the rice took sooo long the kids had to have an alternate supper! Long after the kids were fast asleep, Cody and I enjoyed this delicious Chorizo Spanish Rice! It was worth the wait! Chorizo often goes on sale for super cheap at Target, so be on the look out! You'll want to stock up!

Chorizo Spanish Rice

1 T. olive oil
16 oz. Chorizo, sliced 1/4 inch thick
1 c. uncooked brown rice
2 c. chicken broth
1 14 oz. can diced tomatoes
Diced peppers (I used one large red and one large green because we love peppers!)
1 diced onion
1 tsp. dried marjoram

Heat oil in large deep skillet. Add chorizo and saute until golden, about 5 minutes. Add rice; stir to coat with oil. Add broth, then add onion. Bring to a boil. Cover and simmer 15 minutes. Sitr in tomatoes with juices; add marjoram. Cover and simmer until rice is tender. Add pepper near the end to keep from getting mushy.
