Getting sneaky...


Everyone we know is just giving away candy? I want to be a part of this......and a part they were! Carson kept saying, "This is my best Halloween ever!"After a massive amount of sugar entered the blood streams of my children on Friday night, I knew we needed a healthy jump start on Saturday. Of course, the kids were still in the mood for candy.candy.candy.
So, I put on my Sneaky Mommy and offered them Candy Apple Pancakes. Ooos and Ahhhs followed the breakfast menu announcement. The kids were actually getting loaded up with Whole Grain Flaxseed Pancakes and Agave Style Apple Butter! These taste so good it's hard to imagine they're not loaded with empty carbs and sugar...but they're not! Give sneaky a try!

Whole Grain Flax Seed Pancake Mix
This mix is great to have on hand for quick, delicious pancakes. 1 cup
of the mix, when combined with the egg, oil, and water, will make 5 to 6 pancakes.

For the pancake mix:
1/2 cup ground flaxseed
2 cups whole wheat flour
1 cup finely ground cornmeal (not corn grits or polenta)
1/2 cup old-fashioned rolled oats
1/2 cup nonfat dry milk powder
2 tablespoons maple sugar (optional--I used Sucanat which is dehydrated cane juice)
5 teaspoons baking powder
1 teaspoon baking soda

For the pancakes:
1 cup prepared flax seed pancake mix
1 egg, lightly beaten
1 teaspoon canola or high-heat sunflower oil
1/2 cup water
For the pancake mix combine flax seeds, flour, cornmeal, oats, dry milk, sugar, baking
powder, baking soda and salt in an airtight container in the refrigerator until ready to
use.
For the pancakes, put 1 cup of the pancake mix, egg, oil and water into a large bowl
and stir together with a fork just until combined. For each pancake, pour about 1/3 cup
of the pancake batter onto a greased griddle and cook, flipping once, until golden
brown and cooked through.

Top pancakes with Agave Style Apple Butter...so easy to make and NO SUGAR NEEDED!

Agave Style Apple Butter

18 c. unsweetened applesauce
1 T. cinnamon
pinch of cloves, nutmeg, and allspice
1 1/2 c. agave nectar (now available at Costco--$7 for two bottles!)

Place all ingredients in a crock pot. Heat on high overnight. Set the cover so steam can escape.
Depending on your slow cooker, you may have to cook your apple butter as many as 12 hours. The goal will be to have a thick, dark colored butter of spreading consistency. It will be more tart than the sugary apple butter that Grandma makes! We love it!

Thankfully the candy has been sorted and hidden...it may resurface for needed times of bribery, rewards, or sustinance for...me!
