A Tweaked Recipe

Our family loves pasta! Whole wheat and whole grain pastas have been a great way to allow us to keep enjoying all of our favorite dishes with a little more healthful flair!
This week, the Today Show had a dietitian sharing tips for a balanced diet. She displayed a plate labeled similarly to this one:
I took one of our favorite recipes and tweaked it to match up more with the recommended servings of meat, whole grain, and vegetables. Enjoy!


Chicken and Vegetable Pasta

2 T. olive oil, divided
2 fresh skinless, boneless chicken breast halves, cut into cubes
2 heaping cups sliced carrots
1 large head of broccoli, chopped into florets
2 cloves garlic, minced
1 box whole wheat thin spaghetti (approx. 13 oz.)
1 c. chicken broth
1 tsp. dried basil
1/4 c. grated Parmesan cheese

Heat 1 tablespoon olive oil in a medium pan over medium heat; add chicken. Cook until chicken is cooked through, about five minutes. Remove from skillet and drain on paper towels.
Heat remaining olive oil in the same skillet. Add carrots to pan. Cook and stir for 4 minutes (carrots should be tender-crisp).
Cook pasta according to package directions.
Add garlic, basil, broccoli, chicken broth and chicken to pan. Heat and simmer just until broccoli is slightly steamed.
Drain pasta. Place in large serving bowl. Top with chicken and vegetable mixture. Top with parmesan cheese and serve immediately.
