Gettin' my sneaky back on!

After making and enjoying a gooey delicious Chocolate Marshmallow Crunch Tart

from the Rachael Ray Magazine, I was feeling quite sugar buzzed and slightly guilty.
Although it was delicious, I'm pretty positive it held absolutely no nutritional value...
...okay, maybe just a little in the dark chocolate.


So, I packed up the rest of the tart and sent it home with my in-laws.

Time to get back to healthy cooking, sneaky ingredients, and food for my family that has real nutritional value...no more stinkin' sugar buzzes!

Our kids are always starving in the morning. Muffins are the perfect way to start our day!
Just a warning, these muffins are not your average light and fluffy blueberry muffins.
The whole wheat flour and bran cereal make them very heavy, hearty, and filling.
They are delicious!

Blueberry Orange Muffins
*This recipe was from Tablespoon.com but I tweaked to make it a little healthier and to use the things I had on hand.

1 1/2 cups bran cereal
3/4 cup water
1 tablespoon grated orange peel
1/2 cup orange juice
2 cups whole wheat flour
3/4 cup agave nectar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3 tablespoons applesauce
1 egg
2 tsp. cinnamon
1 cup blueberries
Organic sugar for sprinkling on top

Heat oven to 350°F. Line a muffin pan with paper liners.
Place cereal in bowl and crush with the bottom of a measuring cup.
In a large bowl, stir together cereal, water, orange peel and orange juice; let stand 10 minutes. Stir in remaining ingredients except blueberries (batter will be very thick). Gently stir in blueberries.
Bake 15 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes.

I'll have 1/4 a serving of the muffins so I can save LOTS of room for the tart :-)
