Saturday morning, the kids were up bright and early.
Well, 8:30 felt bright and early.
My body was hoping for 9:00, but I'll take it!
I actually took it quite cheerfully because I had one thing in mind: BLUEBERRY PANCAKES! Don't they just say HAPPY SATURDAY MORNING!?!
I found a great new recipe from epicurious awhile back. I loved its light fluffy pancakes, but hated to give up our usual healthy whole-wheat pancakes. So, I substituted half of the flour with whole wheat flour, and we think they actually turned out even better! Give them a try! You'll be sure to have a Happy Saturday Morning!
Blueberry Pancakes
1 c. cake flour + 2 Tablespoons (I substituted 1 c. unbleached flour + 2 T. cornstarch)
1 c. whole wheat flour
1/4 c. sugar (agave nectar, applesauce or honey work great as substitutes)
1 T. baking powder
1/2 tsp. salt (optional)
2 c. milk
2 large eggs
3 T. melted butter
blueberries
Whisk dry ingredients together in large bowl. Whisk milk and eggs together in another bowl.
Gradually add milk and egg mixture to dry ingredients. Mix in 3 T. melted butter.
Blueberries can be gently added to the batter now or sprinkled on pancakes while cooking.
Serve with maple syrup! (and a big glass of milk!)

Those do look yummy, but I'm still trying to wrap my mind around the fact that your children sleep until 8:30! Mine used to sleep until 7:30 until school started - now they're programmed to get up at 6:45 - every. single. morning.
I'm afraid if I start serving something so yummy as your pancakes in the morning, they'll wake up even earlier in anticipation! ;)

I made some yummy whole wheat pancakes twice over the weekend...totally need to add some blueberries next time. Looks so yummy!!
Yum! Can you use frozen blueberries or do you always use fresh?
