To me, there is nothing better than pasta with fresh tomatoes!
I found a delicious new recipe last week with my handy dandy Whole Foods App!
After choosing the "On Hand" tab, I entered tomatoes and pasta.
This intriguing recipe popped up.
As usual, I didn't quite have all of the exact ingredients, but we made it work!
Everyone loved it and cleaned their plates!
Bonus: it's healthy, fresh, very economical, and easy!
Pasta with Brie, Basil and Tomatoes
3 cloves garlic, thinly sliced
8 ounces brie, with rind, or other semi-soft cheese such as Fontina, cut into (1-inch) pieces (or a bag of shredded of mozzarella because that's what in the frig!)
1/2 cup olive oil
3 to 4 tablespoons balsamic vinegar
Salt and pepper to taste
1 pound whole wheat penne
1 cup basil leaves, torn (or generous sprinkles of dried basil because the fresh was forgotten at the store)
Put tomatoes, garlic, brie, oil, vinegar, salt and pepper into a large bowl and toss gently to combine. Cover and set aside at room temperature to let marinate for 2 to 3 hours. (1 hour will work too!)
Bring a large pot of salted water to a boil. Add penne and cook until al dente, about 10 minutes. Drain well and transfer hot pasta to bowl with tomato mixture. Add basil and toss gently to combine. Serve immediately.

Oh yummy! I love fresh tomatoes and pasta too! And I especially love that it was still good with mozzarella instead - much cheaper! Can't wait to give it a try!

I found this recipe about a week ago and made it. I decided it was the best pasta recipe I had ever eaten. I found that plenty of salt really brought out all of the flavors. I ate it all week and loved every bowl of it! I used the brie and it was wonderfully soft and melty--just marvelous!
