Thrifty Thursday!

Thrifty Tip #66:  Eat BEANS!  No, seriously, black beans, pinto beans, kidney beans, mung beans, great northern beans...legumes...eat them!  They are SUPER inexpensive and full of protein!  Beans pair well with tons of other vegetables, meats, and rice to make quick, easy, and low cost meals!

Here's a new favorite dish at our house!

Black Bean Salsa

 (Thank you Instagram for making my pictures look prettier.)

3 c. black beans (equal to 2 cans)
2 tomatoes (diced)
1 green pepper (diced)
1 bunch green onions (chopped)
2 c. corn (I used frozen corn and ran it under hot water first)

Dressing:
1 tablespoon minced garlic
1 tablespoon Cajun seasoning
1/3 cup olive oil
1/3 cup red wine vinegar
1 teaspoon black pepper


Whisk dressing ingredients well and pour over vegetables.  Chill and serve with Blue Corn Chips!

Got leftovers?  No problem!  We turned this salsa into the most delicious lunch!
I loved it but was even more surprised at how much the kids loved it!

Black Bean Salad
Prepare 1 c. brown rice (I used 1/2 c. brown and 1/2 c. red jasmine rice that I got on a whim in the bulk aisle!).  Rinse with cold water until cooled.  Mix with leftover salsa (about 1/2 the batch) and serve.

Yummy!! We just had black bean tacos tonight. Beans are gooooooood. :)

Mmmm...this sounds delish! We've been doing "Meatless Mondays" {only on Thursdays b/c it works better with our schedule :)} in order to save money on buying meat and I'm constantly on the lookout for more meatless recipes. I'm going to add this to my list to try -- love black beans!!

I just had to tell you that this is like the 20th time I have visited this post so I could make the black bean salsa with the rice. All my Aunts keep asking for the recipe. I almost have it memorized and I really should just print it off, but that would be too easy right?
