Thrifty Thursday!

Thrifty Tip #62:  When watching for bargains on clothing, don't forget to check the store's website for specific sizes and great deals!
 

I had my eye on this little outfit at Crazy8 for quite awhile.  Then, just as the price was starting to drop, they sold out.  I was so disappointed but decided to check the website during their Friends & Family Sale.  Sure enough, they had the exact size I wanted--with an additional 25% off!

Perfect deal for the Little Man who happens to weigh two pounds now and was already sucking his thumb during our ultrasound this morning!  Can't wait to see this outfit filled out with our baby!

Like Peanut Butter and Pickles...

Oh my...PREGNANCY CRAVINGS!
They are seriously weirding me out.
I'm not a picky eater and I normally don't really crave certain foods.

But lately...it's been sushi, peanut butter toast, avocados, dried fruit, Jimmy John's sandwiches, apples and oranges...not weird foods, just feels weird to obsess about eating these things!

Last week, I had a serving of a salad that's normally on my "Eat Once a Year" list.

You know, those salads that you don't really make for your family, so you enjoy them once a year at the large church Thanksgiving potluck dinner.  Then you're good for a whole year...

This time, the salad did not leave my mind: 
Broccoli, bacon, raisins, sunflower seeds, creamy dressing.

I just kept thinking about how good it was and how good it would taste to have again. 
However, I was certain my family would not touch this crazy savory and sweet combination, so I had to alter the recipe down from it's feed-an-army-size.  (I also altered it with a few things I was craving along the way...it feels weird to mix oddly paired ingredients and really like it!)  So, if you're pregnant and craving weird things, you just might like this salad!


Londa's Crazy Broccoli Salad


1 small head of broccoli, cur into small pieces
3 strips of bacon, crumbled
golden raisins (a handful or two)
dried apricots (just a few cut up small)
sunflower seeds (a couple of handfuls)
dried bing cherrries (just a handful)

Dressing:
3 tablespoons light mayo
2 tsp. vinegar (more to thin the dressing, if needed)
2 tsp. agave nectar

Mix broccoli, bacon, seeds and fruit. 
Mix dressing in a small bowl and toss with the rest of the salad.
Enjoy!

An unplanned hiatus...

Eleven days ago...
I was headed out the door with all the kids to see if the doctor could give me something to kick the sickness that had been kicking my tail all week.
Cody called and could barely speak.  He finally got out the name of a college student from our church followed by the horrific word "dead".  Anna had been in a car accident while heading back to college that morning.
We quickly changed plans, packed bags of toys and snacks, and headed to the church.
Her aunt is our church secretary.  We went to answer phones and help out anyway we could.
The next several days seemed to be filled with a blur of emotions and activities (including a trip to the doctor and lots of medicines!).
Our church family blew us away with their love and support for Anna's family.  Beautiful flowers filled our church and hundreds (if not even a thousand) of friends filed through to share their condolences with the family.
As much as we cried and mourned with her mom and dad, brother and sisters, aunts and uncles, cousins, grandma and grandpa, we also rejoiced knowing that Anna was complete and whole, rejoicing and worshiping in her Savior's presence.  Anna had placed her faith in Jesus Christ and accepted His gift of salvation as a young girl.  We mourned, absolutely, but with hope!  This was no mistake--it truly was part of God's plan.  Even this tragedy was for God's glory!
This glory is already unfolding as we see college students, friends and family members seeking to know more about Jesus Christ! 
Part of the glory displayed was also through our church family--every phone call we made or received was a willing, loving volunteer seeking a way to help.  Over 65 people prepared and brought food for the funeral lunch, helped in the kitchen or watched our children.  It was amazing to watch it all unfold--and to see God provide and meet every need.  Anna's life and death brought glory to God!

The rest of last week, the boys and I packed up everyday and headed off to church to play secretary.  I say play because deep down, I've got a serious love for office work.  Give me a phone, a computer, and some projects, and I'll be set!  The boys loved getting to explore the church all day, too!

Working during the day and having activities  every single night last week (including Kindergarten Round-up complete with taking cover for a tornado!) brought on some serious exhaustion.  By Wednesday evening, I was so tired and really running low.  I was racing up to my classroom to teach Bible study but knew I must stop in the restroom (I blame the little mister growing in me!).  The women's restroom was occupied, so I made a hasty decision to dart into the men's restroom.  I flew the door open and found myself seeing...a man.  Augh!!!  I quickly started apologizing and backing out, to which he hollered, "I've got pants on!"  I wasn't sure how to reply.  Congratulations?  He later told me my face turned a deep shade of purple in an instant.  Lesson learned...women's restroom only!
Speaking of restrooms...Cody and I meet with a couple at a coffee shop every week for a Bible Study, and Carson really needed to use the restroom during our study.  I rushed him back to the restrooms to find them both occupied.  We waited and waited and waited.  Finally, a boy came out of the women's restroom. (obviously he hasn't learned his lesson yet)  Carson rushed in and before I could cover the seat or stop him, he hopped up on the seat--boisterously hollering out, "Mmmm...nice and warm!"

So...that's been our rollercoaster!  I'm grateful for God's sustaining grace and mercy!

Thrifty Thursday...St. Patrick's Style!

It may be because I'm pregnant, but, whew, these pancakes did not look appealing this morning!
(Hello, Playdough?)  Thankfully the kids thought they were the greatest things ever!

We had to get OUTSIDE!  It was so beautiful!  We walked around the lake at Jordan Creek several times, watched the goldfish, and chased ran with the geese.

After a quick stop at our favorite toy store, Creative Kidstuff, we headed to our neighborhood park to try out our new rocket!

Then we headed home to make a special Irish Dinner:

1 tablespoon vegetable oil
1/4 head green cabbage, shredded  (leave the rest out to munch on!)
1/2 pound red potatoes, scrubbed and diced
1 pound ground beef sirloin
3 tablespoons tomato paste
1/2 teaspoon Worcestershire sauce
1/2 teaspoon dried thyme
Coarse salt and ground pepper
All-purpose flour, for rolling
2 piecrusts (9 inches each), homemade or store-bought


Directions

Preheat oven to 400 degrees. In a medium saucepan, heat oil over medium; add cabbage and potatoes. Cook until beginning to brown, 7 to 9 minutes. Add beef; cook, breaking up meat with a spoon, until no longer pink, about 5 minutes.

Stir in tomato paste, Worcestershire, thyme, and 1 cup water. Cover, and cook until potatoes are tender, about 15 minutes. Lightly mash mixture with a fork. Season with salt and pepper. Let cool completely.
On a lightly floured work surface, roll each crust into a 14-inch square; cut each into 4 equal squares. Place 1/2 cup filling on one half of each square, leaving a 1/2-inch border around the filling.

Brush borders with water; fold dough over filling to enclose. Crimp edges with a fork to seal. With a paring knife or scissors, cut 3 small vents in each.

Transfer pies to 2 foil-lined rimmed baking sheets; bake until golden brown, 10 to 12 minutes, rotating sheets halfway through.
 To Freeze: Prepare through step 2. Arrange unbaked pies on a baking sheet (they should not touch); freeze until firm, about 1 hour. Wrap each pie in foil. Place in a resealable plastic bag; freeze up to 2 months.

To Bake from Frozen: Proceed with step 3, increasing baking time to 28 to 30 minutes.

*I was pretty generous with the cabbage since we love it, so I have a huge batch of the meat mixture.  I'm going to make more pie crust tomorrow and try freezing them.

 Cloe and McClain really liked these, but after eating almost all of his supper, Carson said miserably, "Can I please be done now?  I just really wanted to make you proud." 

We ended with a little hard work:
The kids were so helpful!  I've been struggling with some sort of awful virus since Saturday, and the kids were great to put all the clean dishes away and load the dishwasher after dinner.

We also took time to read a little history about St. Patrick.

Nothing better!

To me, there is nothing better than pasta with fresh tomatoes!

I found a delicious new recipe last week with my handy dandy Whole Foods App!

After choosing the "On Hand" tab, I entered tomatoes and pasta.

This intriguing recipe popped up.

As usual, I didn't quite have all of the exact ingredients, but we made it work!

Everyone loved it and cleaned their plates!

Bonus:  it's healthy, fresh, very economical, and easy!

Pasta with Brie, Basil and Tomatoes

5 tomatoes, cored and roughly chopped or 2 cups halved cherry or grape tomatoes
3 cloves garlic, thinly sliced
8 ounces brie, with rind, or other semi-soft cheese such as Fontina, cut into (1-inch) pieces  (or a bag of shredded of mozzarella because that's what in the frig!)
1/2 cup olive oil
3 to 4 tablespoons balsamic vinegar
Salt and pepper to taste
1 pound whole wheat penne
1 cup basil leaves, torn (or generous sprinkles of dried basil because the fresh was forgotten at the store)

Put tomatoes, garlic, brie, oil, vinegar, salt and pepper into a large bowl and toss gently to combine. Cover and set aside at room temperature to let marinate for 2 to 3 hours.  (1 hour will work too!)

Bring a large pot of salted water to a boil. Add penne and cook until al dente, about 10 minutes. Drain well and transfer hot pasta to bowl with tomato mixture. Add basil and toss gently to combine. Serve immediately.

Fat Friday...with a history lesson!

Who is this mysterious lady that has mastered the art of sweets?

I don't know about you, but for years, I've had this image of an older lady with soft curly hair, a red apron, and a sweet smile--the kind of grandma figure that always had sweet treats ready for her family.

I thought I'd do a little research and find out some history on this legendary lady who seems to have revolutionized cakes, bars, and cookies with her boxed mixes and just-add-water pouches.

Guess what:
This famous gal, Betty Crocker, never existed!

I feel slightly betrayed.  The nostalgic loyalty I had toward the red boxed mixes feels like a jip!

Betty:  chosen because it seemed warm and friendly.
Crocker:  chosen for William Crocker, an executive with the company.

So there you have it.  Bummer.

These Grasshopper Bars, though:  not a bummer!

Thanks to a recommendation from my friend, Jessica, the teachers at Cloe's school got to enjoy these bars during Parent Teacher Conferences.

*I did have to make a slight change to the recipe.  I only had a brownie mix, so I made the brownies according to the box directions and then followed the rest of the recipe for the bars.  They smelled delicious!


Easy Grasshopper Bars

1 pouch (1 lb 1.5 oz) double chocolate chunk cookie mix
1/3 cup vegetable oil
2 tablespoons water
1 egg

Frosting
3 cups powdered sugar
1 package (3 oz) cream cheese, softened
1/4 cup butter, softened
2 tablespoons milk
1/4 teaspoon mint extract
3 to 4 drops green food color

Glaze
1 oz unsweetened baking chocolate
1 tablespoon butter
  
Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray. 
In large bowl, stir all Bar ingredients until soft dough forms. Press into pan; bake 15 minutes. Cool about 10 minutes. 
In large bowl, stir all Frosting ingredients until smooth. Spread over bars.
In small microwavable bowl, microwave all Glaze ingredients on High 30 seconds; stir until smooth. Drizzle over frosting. Refrigerate 30 minutes or until set. For bars, cut into 9 rows by 4 rows. Store covered in refrigerator.

Thrifty Thursday!

Thrifty Tip #60:  When making new recipes that call for unique ingredients, consider a visit to the bulk bins at your local grocery store to buy just the amount needed and save the expense of buying an entire package.

I've often strayed away from recipes that called for special grains, unique seeds or nuts, and select dried fruits because I didn't want to incur the high expense of an entire container just to use it for one recipe.

Last week, I had a light-bulb moment in the Natural Foods Section of our local grocery store.  I could just buy approximately 1/4 cup of pepitas at a fraction of the price that a package would cost!  The figs I'd been wanting to buy...I just bought 5 of them!  Seriously, I was a measuring, smiling, crazy woman in that aisle of the grocery store!  As I ran through recipes on my phone for the items I needed, I was able to fill bags of ingredients for well under $1 each!

This may seem silly to you, but there's nothing worse than dropping $5 for a package of a grain that you realize later you don't really prefer or won't ever use again.  I also feel like dropping the $5 to $7 for a single grocery item really limits the variety of items I can purchase on our grocery budget.  Just getting enough for a "taste test" allows us to decide if it's worth dropping the cash for it next time.

Couscous!

I love to read recipes.

So did my Grandma.

She read cookbooks a lot--even after going to a nursing home.
(She would probably still be reading them but her eyesight has failed)

I have a feeling that will be me someday...in a wheel chair with my cookbooks iPad! (a girl can dream, right?)

One of my favorite newsletters is from a local kitchen specialty shop--The Kitchen Collage.

This last newsletter was full of wonderful recipes with all sorts of grains.

I made this recipe for lunch, and it was a hit!

It's colorful, flavorful and packed full of good nutrition!

Quick Bean and Vegetable Couscous
Makes 5 cups, about 4 servings

Fast, flexible, and filling, this pilaf will help you get fiber-rich meals on the table in no time. You can use the tomato juices as part of the cooking liquid for a sprightly orange hue, and vary everything to suit your taste.

2 tablespoons olive oil
1 large carrot, shredded
1 large onion, chopped (about 2 cups)
2 cloves garlic, minced
1 14-ounce can diced canned tomatoes, drained
1/2 teaspoon freshly cracked black pepper
3/4 teaspoon salt
1 15-ounce can black beans, drained and rinsed
1-1/4 cups vegetable stock
1 cup whole wheat couscous
1/2 cup chopped fresh parsley (I used cilantro)
4 ounces aged cheese, shredded
Heat the olive oil in a 4-quart saucepan with a tight-fitting lid. Add the carrot and onion and sauté over medium heat until soft and golden, the longer the better. Add the garlic, tomatoes, pepper, salt, and beans. Sauté, stirring gently, until everything is heated through. Add the stock or water, push the veggies to the sides, and bring the liquids to a full boil. Turn off the heat, add the couscous, stir once quickly, and cover tightly. (If using bulgur, return to a full boil, cover tightly, simmer for 10 minutes, then take off the heat).

Let the pot stand, covered, at room temperature for 10 minutes to absorb the liquids and flavors. Add the parsley, fluff with a fork, and serve warm, topped with the cheese.

Happy Fat Tuesday!

King Cake

for breakfast


'cause that's how we roll on Fat Tuesday.



King Cake
(recipe courtesy of King Arthur Flour)

Dough
1/2 cup (1 stick, 4 ounces) butter, melted
3/4 cup (6 ounces) lukewarm milk
2 large eggs + 1 large egg yolk, white reserved
3 1/2 cups flour  (I used 2 c. unbleached all-purpose flour and 1 c. whole wheat flour)
1/4 cup sugar
1/4 cup nonfat dried milk powder
1 1/4 teaspoons salt
2 1/2 teaspoons instant yeast
1/4 teaspoon ground nutmeg
1/8 teaspoon Fiori di Sicilia or lemon oil, or 1 teaspoon grated lemon rind

Filling
8-ounce package cream cheese
1/2 cup sugar
3 tablespoons unbleached all-purpose flour
1 large egg, lightly beaten
2 teaspoons vanilla or 1/8 teaspoon Fiori di Sicilia or lemon oil

Icing
2 cups confectioners' sugar
1 teaspoon vanilla extract
2 tablespoons + 1 to 2 teaspoons milk, enough to make a thick but pourable glaze

Topping

yellow, purple, and green fine sparkling sugars
candied red cherries (optional)
Lightly grease a 10", 4-cup capacity bakeable stoneware ring mold, or a baking sheet.

To prepare the dough: Using a stand mixer, electric hand mixer, or bread machine, mix and knead all of the dough ingredients together to form a smooth, very silky dough. You may try kneading this dough with your hands, if desired; but be advised it's very sticky and soft. Allow the dough to rise, covered, for 1 hour. It'll become puffy, though it probably won't double in size.

Transfer the soft dough to a lightly greased work surface. Pat and stretch it into a 24" x 6" rectangle. This won't be hard at all; it's very stretchy. Let the dough rest while you prepare the filling.

To prepare the filling: Beat together the cream cheese, sugar, and flour till smooth, scraping the bowl once. Add the egg and flavor, again beating until smooth.

Dollop the filling down the center of the long strip of dough. Then fold each edge up and over the filling till they meet at the top; roll and pinch the edges together, to seal the filling inside as much as possible. Don't worry about making the seal look perfect; it'll eventually be hidden by the icing and sugar.

Place the log of dough into the prepared ring mold, seam down or to the side (just not on top), or onto the baking sheet. The dough will be very extensible, i.e., it'll stretch as you handle it. So pick it up and position it in the pan quickly and gently. Pinch the ends together. Cover and let rise for about an hour, until it's puffy. Preheat the oven to 350°F while the dough rises.
Whisk the reserved egg white with 1 tablespoon water, and brush it over the risen loaf. Bake the cake for 20 minutes, then tent it lightly with aluminum foil. Bake it for an additional 30 minutes, until it's a rich golden brown. Remove the cake from the oven, and after 5 minutes gently loosen its edges from the pan, if you've baked it in a ring mold. After an additional 10 minutes, turn it out of the pan onto a rack to cool (or transfer it from the baking sheet to a rack to cool).


To make the icing: Beat together all of the icing ingredients, dribbling in the final 2 teaspoons milk till the icing is thick yet pourable.

Pour the icing over the completely cooled cake. While it's still sticky, sprinkle with alternating bands of yellow, purple, and green sugars. Space candied cherries in a ring around the top. Yield: One loaf, about 16 servings.

This was SO easy!  The dough was super easy to stir up--wish I would have taken a picture of it.  Just follow the directions and Viola!  We love Mardis Gras treats!

Our children decided that they all were going to have growth spurts this week and go through four boxes of cereal.  (They devoured plain bran flakes like they were candy...crazy!)

And Kellogg's website has great coupons!

And several of the boxes of cereal have $1.00 of produce coupons attached.

And one kind has a $1.00 off milk coupon attached.

4 pounds of strawberries (on sale for $1.68 lb)

1 Gallon of Milk & 3 pounds of sausage (not pictured)

Grand total for 45 items:  $56.44

I'm totally not posting this to gloat, but to encourage you to always be looking for great deals--especially if you have growing children and are on a tight budget!  God provides blessings even in the cereal aisle!

Fat Friday

You know that friend who just seems to know how to make sugar taste good?

You feel lucky to know her when you're craving sugar...
...and cheat on your diet when her sugary treats are brought to a get-together.

Yes, that friend...
...who has mastered sugar with such an art you're tempted to call her your Sugar Mama...but that would just seem a little weird.

Well, the recipe for these Monster Cookies comes courtesy of that friend of mine!

We've tried many different recipes for Monster Cookies at our house,
and this one is hands down the best!
I really should have just known...

Monster Cookies
 
6 eggs
1 lb. brown sugar
2 c. white sugar
1 1/2 tsp. vanilla
1 1/2 tsp. Karo syrup
4 tsp. baking soda
1 c. butter
1 1/2 lb. peanut butter (can use the whole 28 oz. jar)
9 c. oatmeal
12 oz. chocolate chips
1/2 lb. M&M's
Mix and bake 13 minutes at 350 degrees.

*The secret for mixing these is to use the mixer for everything but the oatmeal and M&M's.  I have a mixer with a bread kneading attachment, so I use that to mix in the chocolate chips and M&M's.  (The mixer blades break up the M&M's otherwise.)  Then I put the oats in the biggest bowl I can find and mix the dough into it.

And the result is...

We're having a BOY!

The Crigger Men are gleaming with pride as their team grows.

Big Sister was a little teary as it soaked in that she wasn't getting a baby sister.  
The Crigger Gals are going to have to stick together!

Momma...feeling quite overwhelmed again today.
FOUR children.  
Definitely sure I'm not worthy of that calling.
Realizing that it will truly ONLY be done in God's strength.


Now all glory to God
